Ingredients
125g butter
1/2 cup firmly packed brown sugar
1 egg yolk
375g plain all purpose flour
1 tsp bicarbonate soda
3 tsps ground ginger
125ml golden syrup or treacle
Royal Icing
1 egg white
240g icing sugar
food colouring
Method
- Preheat oven to 180c. Grease three oven trays.
- Beat butter, sugar and egg yolk in a small bowl with an electric mixer until smooth. Stir in sifted dry ingredients and golden syrup to a soft dough. knead dough on a floured surface until combined. Roll dough between sheets of baking paper until 3mm thick. Refrigerate for 1 hour.
- Using a 13cm gingerbread man / woman cutter, cut out shapes from dough and place on trays about 3cm apart.
- Bake gingerbread people for 10 minutes or until lightly browned. Cool on trays.
- Meanwhile, make royal icing.
- Decorate gingerbread men and women with icing being very creative.
To make Royal Icing
Beat egg white in a small bowl with electric beater until frothy, gradually beat in enough softies icing sugar to give a mixture of piping consistency. Tint with colourings as desired. Keep royal icing covered with a damp tea towel to prevent it drying out.
